Back in Hiroshima, this was recommended to us as the best okonomiaki place in a building entirely devoted to a dozen or more such places. Here’s our friendly proprietor surrounded by his staff as they skillfully shape piles of food into typical shape. The woman on the right is applying a layer of the “syrup” that gives okonomiyaki its distinctive flavor. The version we had here was less dense and made in a different way from that we had eaten in Kyoto, including fried noodles.
