Potato
Cheese Casserole
1 large onion, sliced thinly
2 Tbsp margarine or butter
2 lbs Russet potatoes, washed and cut into chunks
4 oz grated Cougar Gold Cheese
Salt, pepper to taste
1 cup chicken stock
Preheat oven
to 350°F.
Saute onion in margarine until translucent.
Mix onion, potatoes, and cheese in buttered baking dish; season
with salt and pepper. Pour the chicken stock over the potato mixture.
Bake covered for about 1 hour, until the potatoes are tender.
Remove cover and place under the broiler until lightly browned.
