Coug FAN Coffeecake
2 1/3 cups all-purpose flour
Preheat oven to 400°F.
Preheat oven to 400°F. Grease a baking sheet; set aside. In a medium bowl, stir together flour, sugar, baking powder and salt. With a pastry knife, cut in cream cheese, butter and shortening until mixture is crumbly. Stir in milk. Mix in cheese. On a lightly floured board, knead dough until soft. On waxed paper, roll out dough to a 12” by 8” rectangle. Spread jam over 2/3 of the rectangle; sprinkle jam with the walnuts. Fold the plain third of the rectangle over the middle. Fold over again, making 3 layers of dough that measures 8” by 4”. Seal edges. From folded edge, cut dough into 1 inch slices to within 1 inch of opposite side. Twist strips sideways so that the cut side is up, forming a fan-shaped loaf. Bake about 25 minutes or until golden. Remove from baking sheet and cool on a rack for 10 minutes. Prepare glaze; drizzle glaze on warm coffeecake.
1 cup powdered sugar
In a small bowl, beat together until smooth the powdered sugar, milk and vanilla.
